Summer Soft-Serve

Our a/c is out. It's hot. So, I was inspired (by the heat and a desire to still fit into a bathing suit) to make some healthy frozen treats.  This recipe is absurdly easy, fantastically delicious, and decidedly healthy. 
"Soft-Serve"
makes enough for one

1 banana, cut into a few chunks and frozen
splash of liquid (milk, almond milk, maybe fruit juice of some sort depending on the flavor combo you choose)

Optional add-ins

Peanut butter
Spinach
frozen mango
frozen pineapple
frozen berries
carob powder
oatmeal
chia seeds

Place frozen banana chunks and whatever add-ins you choose into a food processor.  Pulse until light and fluffy, adding liquid as necessary.  Plain banana is awesome.  I love to kick the nutrition up a notch and add a handful of fresh spinach leaves (I PROMISE, you won't taste it!).  A good amount of carob/cocoa powder can turn it into a chocolately treat (if you use cocoa powder, I would add a bit of liquid sweetner too, like maple syrup or honey).  I haven't tried it yet, but banana/spinach/mango with a bit of lemon juice would probably be awesome! 

Topping Ideas:

Chocolate syrup
Balsamic drizzle
Nuts
Chia seeds
fresh berries
Granola


Get to it! Cool off with no guilt and tons of nutrition!

I recently had Aubrey do a desert bar for a wedding. She made the most delicious chocolate dipped apricots and popsicle brownies ever. It was a huge success. Thank you Aubs!
