I try to share my personal life as it pertains to the recipe or in a way that might inspire or resonate with a reader. But, I also try not to overshare. I don't think of this as a space to vent or complain or overwhelm the recipe or post of the day with my own issues and concerns. I preface this post with that "disclaimer" because I need to share a bit more than usual in order to help give context for this post and posts to come, and for the lack of posts that have become all too normal around here.
As you may know, baby boy arrived almost 7 weeks ago. He's growing so fast and learning new things every day. He's wonderful and challenging and adorable and overwhelming all at the same time. Poor little man is suffering from severe reflux. This means he spends much of his day in discomfort or pain, and that means he needs quite a bit of extra TLC. This translates into a lot of extra time on his momma and no free hands for me. So, cooking has fallen to the wayside and most of my day is spent trying to survive. Trying to make sure my son feels loved despite his discomfort and knows I'm here, even when I can't do much to ease his pain. Additionally, after extensive testing with our chiropractor, we've discovered a few different food sensitivities. Since baby boy is only 7 weeks old, he's not doing much food exploration on his own, which means momma has to avoid the foods that annoy baby boy so he doesn't get them through his daily breastmilk regimen! Among other things, dairy is an offender. I tell you this because you may notice that the recipes coming up on the site and some of the posts I write may focus on dairy-free cooking/baking/life. I hope to do a post soon on dairy and why it can be challenging for little ones, etc., but for today, I want to give you some ideas for healthy, quick snacks, some of the "go-to" items I've been grabbing when I only have one hand or half a second to feed myself before baby boy needs some lovin'.
So, without further adieu:
Dates with peanut butter - a powerful bite! I just dip a dried date in some all natural peanut butter and munch away.
Apricots with peanut butter - a variation on the above, but still super delicious and easy. Both are very filling very quickly.
Avocado Pudding - a regular favorite for me. So chocolatey and delicious! I use dairy-free chocolate chips to make it baby-friendly. :) I typically try to make a big batch and then just dish it out when I need a little something to eat.
Hummus with veggies or on a salad - I often just make a standard hummus, but this one and this one are both great options too!
Gummies!!!!! - one of my absolute favorite options. I vary the Emergen-C flavors to change things up. Plus, the Emergen-C gives me some added vitamins and immune boosting during this lovely flu season.
Hopefully, these will give you some ideas for healthy, easy snacking. I'm going to be posting a great, crazy-healthy, gluten-free, dairy-free, vegan cookie recipe that you can easily eat for breakfast, lunch, snacks, and dessert with absolutely no guilt! I'll also be posting a great muffin recipe that is also guilt-free, as it's full of carrots, kale, pineapple, and raisins, makes use of the pulp produced from juicing, and are still absurdly delicious (husband LOVES them and even shared them with his office because he thought they were so good, even though they're green.) Back soon, whenever baby boy lets me have both hands again!
