First, I DID IT! I went 21 days, 3 whole weeks, with NO added sugar! How are you doing on the challenge? Second, I’ll report later this week how it feels when I add sugar back in here and there, but at this point, I definitely didn’t notice that much of a difference and really just missed chocolate…and I seem to have reacted just fine to the dark chocolate I put on my overnight oats this morning... :)
So, before my added sugar challenge, I found this awesome little recipe that I tinkered with for a microwave, single-serving fruit cobbler. It’s so versatile, quick, and delicious. Many an evening I was tossing it together after N went to bed for a little treat. I’ve only made it so far with frozen fruit, but fresh should absolutely work. I’m thinking I might try to get some fresh rhubarb and toss that in with strawberries this week…
This recipe calls for just a touch of sugar in the dough on top, but it’s very minimal. I don’t’ add any to the fruit, but if your fruit is very tart, you may want to, but I’d encourage you to try going without and just savoring the natural fruit sweetness… I wouldn’t use something like apple for this, unless it’s pre-cooked, as it’s just unlikely to get very soft and juicy in the microwave cook time.
Single Serving Fruit Cobbler
Serves 1 (or 2 small servings)
~3/4 cup fruit (frozen or fresh), chopped
1/3 cup flour (I use Einkorn)
½ Tbsp sugar
½ tsp baking powder
1 Tbsp butter
1-2 Tbsp milk
In a large, microwave safe mug, add your chopped fruit. In a separate little bowl, mix the flour, sugar, baking powder; add the butter and mash it around with a fork a bit until combined (should still be small chunks of butter). Add the milk, a tablespoon at a time, and mix gently until a sticky, but not runny dough forms. Plop the dough on top of the fruit in the mug.
Microwave on high for about 2 minutes. Frozen fruit may require a little more time. Fruit should be bubbly and juicy; dough should be cooked through. Careful! It will be VERY hot. YUM!!!
