I didn't expect to be writing this post. Well, at least not about this particular recipe. I thought I'd be sharing some delicious sugary concoction. Or at the very least, some lovely baked good. But….then I made this.
It was on a whim, trying to round out a dinner that was so far comprised of salmon. I did a quick google search. I randomly threw in ingredients into the food processor and just hoped it wouldn't completely suck. Instead? Instead, out came this amazing, delicious, awesome puree, with a depth of flavor and goodness that I definitely had no reason to expect. Anyway, now I just want to make it like every day. So, I hope you will enjoy it as much as I did!
Pea Puree
makes about 1.5 cups, I think, i wasn't really measuring, as I didn't expect to like it this much! It was enough for 2 as a side.
about 2 cups frozen peas
1 Tbs butter
1+ Tbs whole milk (start with 1, but drizzle in more to get the consistency you want)
1/2 tsp minced garlic
salt
pepper
pinch of nutmeg
In a medium saucepan, heat the butter, garlic, and peas over medium-low to medium heat. Add a bit of salt of pepper (you can always adjust in the final puree if you want more). Let the butter get all melty and lovely; allow a few of the peas to get a little caramelized (brownish). Remove from heat and pour peas mixture into a food processor (a blender might work too, but I haven't tried it). Add your nutmeg (just a touch, again, you can always add more!) and your milk and process until nice and smooth. If you want it a bit thinner, add a little more milk, a bit at a time, and continue processing until smooth and velvety. Devour. Also great for little ones who are just starting to eat table foods.
