The Paleo diet has become super popular as of late, drawing a lot of attention for its proclaimed health benefits. While I would be happy to discuss the pros and cons of this way of eating if people are interested/want to chat, that's not that actual topic of today's post. Instead, I wanted to try and offer a Paleo-friendly recipe!
This recipe calls for corn. I did some research and it seems like there are mixed reviews as to whether corn is a yes or a no on the Paleo menu. I use organic corn, and local when I can get it. Corn can be eaten raw and easily picked, which seems to lend it to the Paleo way of eating. Anyway, whether you're Paleo or not, this is a great recipe and really perfect for a fresh, summer dinner.
Mega Mix aka Summer Lettuce Wraps

These are really called BLT Lettuce Wraps (I call them Summer Lettuce Wraps), but my husband took one bite of the yummy filling and proclaimed it "mega mix."
3 ears shucked corn
1/2-1 cup cherry tomatoes, quartered (Justin isn't a big fan of the tomatoes in this, so we use just 1/2 a cup)
1/2 cup chopped green onions (about 5 green onions)
1 avocado, diced
3-4 slices crisp cooked bacon, diced
juice of 1 lime
1 tbs olive oil
salt and pepper
sprinkling of chili powder and paprika
Romain lettuce leaves
Hot sauce and sour cream for topping (optional)
Shuck the corn. Toss the bacon slices in a hot pan to cook. When the bacon is almost to the doneness you like, pull it out and dice it up. If you have a grill, you can grill the corn. I just cut it off the cob and saute it with the now diced bacon. Cutting the corn off the cob will result in corn going everywhere; embrace the chaos!
While the bacon cooks, chop up the green onions, tomatoes, and avocado. Throw them into a big bowl with the lime juice, oil, and spices. When the corn is ready (caramelized), throw the corn/bacon mix into the bowl and toss everything together.
Pull off several large Romaine leaves. Scoop filling into a leaf; top with hot sauce and/or sour cream. Eat like a taco. Enjoy!
