Well, despite my best intentions, I have clearly been behind on keeping up with the blog. It's actually a good thing. I've had several new clients, started to partner with a really unique and awesome supplement company, and been asked to do some extra contract work. Anyway, I recently posted a picture to my Instagram account of a lovely sticky crab fried rice dish that we’ve been adoring recently. I’ll be posting the recipe soon, but I posted the picture not just because we love the dish, but because it was one of many recipes that I’ve put my own spin on to make them even more nutritious.
I am a huge fan of healthy food being delicious. I’ve added lentils to sloppy joes, a myriad of vegetables to smoothies, and made more than one muffin recipe with veggies. Any time I can sneak in some extra nutrition, I’m going to try and do it. To be clear, this is as much for me as for the rest of my family. I’m not always a big veggie fan and definitely struggle to fill my diet with them. I tend to do pretty well with salads, but have to coerce myself into branching out beyond that. I also prefer to have “one dish” dinners. By that I mean I don’t like having to come up with a main dish, side, etc. If I can just make ONE thing and it can check all the boxes, I’m a happy momma.
So, when I found this awesome-looking sticky crab fried rice recipe, I was super excited to try it. The first time I made it, I did it as written – it was delicious. BUT, it was super low on the veggie scale and made me feel like I needed to come up with something additional to go with it for a balanced dinner.
