It's been one of those weeks. Sometimes it feels like most weeks are "one of those" weeks. You know, the ones where popcorn and chocolate chips seem like a perfectly acceptable dinner choice. Or when finding cherry juice drops on your shirt doesn't seem even slightly out of place for how the rest of the day/week has been progressing. With kids heading back to school, I can only imagine the kind of week it's been for so many parents and kids out there...
So, in honor of it being one of those weeks, I'm giving you a recipe for something I've never posted about before - a lovely little adult beverage (if you leave out the alcohol, it'd be a pretty awesome "fancy" drink for the kids, too). It was, believe it or not, inspired by the farm where I work, as some fresh mint leaves turned up and upon smelling them, instead of thinking of all the delicious Greek/Middle Eastern-inspired dishes I could make, I thought instead of this drink. Paired with a quesadilla, it did help make at least the evening a bit less....dsjdfkj, ya know? :) Don't worry; I'll post some new dinner recipes soon (I'm doing some experimenting tonight, in fact. Shh! Don't tell, hubby!) And might even try to make some homemade ginger beer for the next round of this delightful concoction.
My "Moscow Mule"
1 drink
1/2 cup (4 oz) ginger beer (not real beer, like root beer except with ginger)
1/4 cup vodka
1+ Tbs fresh lime juice (juice from 1/2-1 lime, depending on how well you squeeze it; I like mine a bit more limey)
fresh mint, finely chopped
Place a few ice cubes into a glass. Cover with your ginger beer, vodka, and lime juice. Stir gently and then sprinkle with the fresh mint. Enjoy. Omit the vodka and I'd bet this would be a hit with the kiddos, too.
