I found some amazing tuna steaks at the store the other day. They're marinated in ginger and garlic. I wanted to find something delicious to make to go with them; fresh, light, summery and healthy.
This ginger sesame slaw is perfect. It's got just the right amount of overlapping flavors to meld with the tuna. I was able to find local red cabbage at the farmers' market. I love when I'm able to buy local and in season! This slaw would be great with other fish dishes, BBQ chicken, or on top of some fish tacos or carnitas.
Ginger Sesame Slaw
adapted from closetcooking.com
2 cups shredded red cabbage (about half a small cabbage)
2 green onions thinly sliced
1 carrot shredded
Dressing:
juice of half a lime*
1 tbs olive oil
1/2 tbs sesame oil
1-2 tsp honey
2 tbs apple cider vinegar
handful chopped cilantro (or 1-2 tsp cilantro from an herb "tube")
1 tbs finely chopped ginger
1 jalapeno pepper, finely chopped and seeds removed
Mix the cabbage, green onion, and carrot in a large bowl. Stir all the dressing ingredients together in a small bowl. Toss the dressing with the slaw veggies until evenly coated. Sprinkle with sesame seeds to serve if desired.
*have trouble getting juice out of your limes and lemons? Let the citrus warm up a bit on your kitchen counter (perhaps while you prepare the rest of the ingredients!). Before cutting it, roll the lime (or lemon) firmly on the counter to help break up the plant cell walls. Cut and then squeeze; you should get a considerably higher amount of juice than usual!
