Pizza. No matter the season, pizza is always a solid go-to. We make pizza at home here and there (it's often an easy take-out option on nights I was just too tired to cook/meal plan), but I've struggled to find a pizza sauce that we truly love. This one, however, this one is awesome. It can be made with fresh tomatoes or canned. I'm hopeful that I'll have a crazy-good tomato turnout this summer from the garden and can make batches and batches of this simple sauce to freeze for months to come.
The first time I made this sauce, I used tomatoes I had frozen from the summer. When I make it for dinner this week, I'll be using canned tomatoes, as I don't have any fresh ready to go. The point is, it's super versatile. You can make the sauce and freeze it, or you can just quarter your tomatoes, toss them in a ziplock bag, and freeze to make the sauce up fresh at a later time. Don't worry about seeding, peeling, etc. your tomatoes; no need. And the peel adds more vitamins and minerals anyway! I'm planning to top a cauliflower pizza crust with this lovely sauce for dinner this week. It's take two on the cauliflower pizza crust, as the first one was a huge disappointment in the texture department. We'll see...I'm hopeful I'll have a great recipe to share with you very, very soon!
Favorite Pizza Sauce
enough for 2 10"-ish pizzas
1 Tbsp olive oil
2 tsp minced garlic (about two or three large cloves)
1 tsp dried oregano
2 pounds quartered tomatoes (fresh or previously frozen) OR about 30 oz of diced tomatoes, canned
1 tsp granulated sugar, honey, or agave nectar (I'll be omitting or tossing in some date paste this week to stay consistent with my no added sugar challenge)
1/4+ tsp red pepper flakes (depending on how hot you like it!)
1/2 tsp kosher salt
Black pepper to taste
Place your tomatoes in a blender and blend until smooth (unless you like a chunky sauce, then don't blend or just blend a bit). Set aside.
In a medium sauce pan over low-medium heat, add your olive oil and garlic, stirring and cooking for about a minute. Add your oregano. Increase the heat to medium. Add the tomatoes, sweetener, red pepper flakes, salt, and pepper. Continue cooking, stirring occasionally, until boiling. Reduce the heat to low for a gentle simmer. Simmer, uncovered, for about 90 minutes (you can place a splatter screen over the top of the pan to help reduce mess.
After 90 minutes, check to see if the sauce is the consistency you want. If you'd like it a bit thicker, keep simmering and reducing. Otherwise, remove from heat, taste, adjust seasonings as needed, and lather over your chosen crust immediately. Top with cheese, delicious toppings, and get ready to make pizza night a weekly part of your life.
