Whew. Homestretch of the internship…just 12 more weeks to go! You know those mentally tough days, the ones where you know that getting through the day is more an exercise of willpower than anything else? Yea, there've been quite a few of those as of late. It's really all very good, but the constant barrage on my brain…well, it takes a lot some days! So, I've done quite a bit of baking and cooking, but haven't had the chance to really sit down and write the recipes out.
So, until then, I wanted to share a "recipe" with you that I'm pretty much in love with. Remember Pudding Power? If you don't, you should get on that -- pronto. Anyway, I found this AMAZING topping to go with it that just takes it over the edge. I've been waiting until I remembered to take a picture of it to share with you (I keep eating it all too fast!). I finally snapped a picture, but you'll have to excuse the crappiness of the photo - I remembered at the last second to take a pic with my phone before devouring the rest. :) Anyway, make this. It's awesome. I eat it for breakfast. For a snack. For dessert. Whenever, really.
Pudding Power Plus
1 batch of Pudding Power
1/2 a fresh mango, diced
1-2 Tbs shelled pistachios, chopped
fresh mint, a tsp finely diced
Make your pudding. Prepare your "toppings". Top pudding. Eat. Repeat
