I don't know about you, but around my house, lunch is the worst meal for a mom. Between trying to get N fed, handling dirty dishes, taking a much needed breather from the littles (husband is usually available to eat lunch at the same time and keep an eye on the crazies for a few minutes), finally pee in peace for the first time all day, toss in a load of laundry, clean up after E's previous feed, and get ready for her next one and nap time, finding an extra moment to make my own lunch, let alone eat it, is next to impossible.
Recently, I came up with a little something that I'm totally loving (aka I threw some stuff together that needed used up from the fridge and it totally worked out!). It's healthy, quick, pretty filling, balanced, and can be eaten with one hand. For those who avoid gluten, it's naturally gluten-free, and if you're vegetarian, can easily be adapted. For vegan or dairy-free, try hummus or mashed avocado with salt and pepper in place of the cheese.
Go-To Momma Lunch
serves 1
1/3 - 1/2 bell pepper, seeds removed
goat cheese or brie, enough to "coat" the inside of your bell pepper "shell"
sprouts
slice or 2 of turkey
2-3 romaine leaves
Take bell pepper slice, press cheese into it so it's evenly distributed (like if you were "spreading" it on a piece of bread; if you're vegan or dairy-free, replace with hummus or mashed avocado - or if you're just looking to change things up a bit!). Top with sprouts, then the turkey slices, and finally fold the lettuce in half to form the "top" of your "sandwich". (If you're confused as to what I'm trying to say here, see picture above!) Feel free to adapt this as desired, adding cucumbers or shredded carrots, tomato slices, and crispy bacon. Pair it with some fruit and you've got a complete meal that can be consumed one handed while feeding a fussy baby or carrying around a tired toddler.
