It always feels so strange to try to get back to "normal" after the holidays. The combo of days off and an often lack of normal schedule with respect to eating patterns, food choices, and exercise....coming back from that can be just about anything but easy!

No matter what your goal, nutrition/health orientated or otherwise, a good diet will help get you off on the right track. Today's recipe is a fun spin on traditional hummus (which in and of itself is AWESOME!). It's protein-packed, low in fat, high in fiber, and is just all-around filled with goodness. Put this hummus on veggies, wraps, bread, crackers...a spoon. It's delicious!
Edamame Hummus
makes just under 3 cups
Oh She Glows
**This makes a good deal of hummus. It seems to store well in a sealed container in the refrigerator for probably 5 days. You can also just make half the recipe for a smaller batch.
500 g (about 1 bag) shelled edamame (frozen is fine)
1/4 cup tahini
3+ Tbs water
3 Tbs lemon juice (juice from about 1 lemon)
2 tsp minced garlic (2 cloves)
1/4 tsp coriander (optional)
1/4 tsp salt (or to taste)
To Garnish
cayenne pepper
olive oil
whole edamame
If using frozen edamame, either let thaw and rinse, or boil for 2-3 minutes and drain. Combine all ingredients into a food processor. Process until smooth. Add more water as necessary to obtain desired consistency. Garnish with cayenne pepper, a drizzle of olive oil, and some whole edamame, if desired. Consume and let the goal-setting and goal-getting commence!
